The flips belong to the same class of drinks as the Egg Noggs but contain the yolk of a fresh egg and never any milk. The can be made from Port, Sherry, Claret, Gin, Dubonnet, or Fruit juices.

Ale Flip

Ale flip is a very old drink made from the yolk of an egg beaten up with sugar and Ale. It can be made with or without ice or served hot by heating the Ale. When shaken the Ale used should not contain gas so its best to use Bitter Ale. Alwats grate Nutmeg on top

Boston Flip

The yolk of a fresh egg
1/4 gill of Madeira
1/4 gill Rye Whisky

Champagne Flip

The best way to make this is by thoroughly shaking the yolk of a fresh egg with ice
Then open the shaker and add the Champagne
Strain into a wine glass and grate nutmeg on top
Sugar or Sugar syrup is only added when required sweet

Lemon Flip

Fill the shaker half full of broken ice and add
The yolk of a fresh egg
Sugar syrup asccording to taste
1/2 gill Lemon Juice
Shake well and strain into a small wine glass and add grated nutmeg on top

Sherry Flip

Fill the shaker half full of broken ice and add
The yolk of a fresh egg
Sugar syrup asccording to taste
1/2 gill Dry Pale Sherry
Shake well and strain into a small wine glass and add grated nutmeg on top
